You can’t overdo it

What about safe dosages of MSG? How much additives are usually put into foods? A very small amount – less than 1%, in rare cases – a little more.

This is due to the fact that usually all dosages are given with a hundredfold safety margin. Secondly, glutamate itself has an intense taste, you can’t put too much of it.

But what happens if you still overeat glutamate? In fact, it’s nothing particularly scary. After all, even if you seem to have limited yourself from foods with added monosodium glutamate, you still consume it along with protein foods. Besides, you still can’t put in a lot of glutamate. During production, the amount of additive can be reduced using ribotide – substances with the same umami taste.

Finally, if you eat a lot of MSG, nothing will happen. It will simply be processed in your body, no poisoning will follow.
