Ingredients for 3 servings:
250 g fresh porcini mushrooms
250 g chanterelles
2 pcs. onions
2 tablespoons vegetable oil
200 ml milk
400 ml vegetable broth
30 g flour (optional for thickening)
1 small bunch fresh thyme
Salt to taste
Black pepper to taste
Preparation:
Preparation of ingredients: Thoroughly clean and finely chop the mushrooms and onions. This will help bring out their flavor in the soup.
Frying: Heat vegetable oil in a deep saucepan over medium heat. Add the chopped onion and fry until translucent, then add the mushrooms. Stir-fry for 5-7 minutes until the mushrooms begin to release their aroma.
Cooking the soup: Pour in the milk and vegetable broth, stirring them with the flour to thicken as desired. Cook over low heat, uncovered, and bring to a boil, stirring to avoid lumps forming.
